<p>Serves 4</p>
<p>4 small skinless, boneless organic/naturally raised chicken breasts<br />
1 tablespoon plus 2 teaspoons extra-virgin olive oil, divided<br />
sea salt and black pepper </p>
<p>Clean and trim chicken breasts. Heat 2 teaspoons olive oil in a sauté pan. Add chicken and sprinkle with sea salt and black pepper. Cook 5 to 7 minutes or until light golden brown, flip, season the other side, and cook another 5 to 7 minutes until done. Remove from pan and slice into strips.</p>
